Zuper Low Carb Zevia Almond Bread

1 (16-oz) Almond Meal (or almond flour)* (@ 4 ½ cups)
1 tsp. salt
1 tsp. baking soda
1 Tbsp. baking powder
2 tsp. powdered stevia
5 large eggs
½ cup ground flax seed
1 cup Zevia lemon lime soda
1 tsp. apple cider vinegar
1 tsp. sesame seeds (optional)

1.) Preheat oven to 325º F.
2.) In a large bowl, combine almond meal, salt, baking soda, 3/8 cup of flax seed, and baking powder.
3.) In a medium bowl, whisk eggs until frothy, then add Zevia and vinegar
4.) Add wet mixture to dry mixture and mix thoroughly.
5.) Spray aerosol cooking spray into a 5” x 9” oiled loaf pan and sprinkle with remaining ground flax seeds
6.) Pour mixture into loaf pan.
7.) Immediately place in oven on center rack and bake for 55 minutes or until a toothpick inserted in center comes out clean. If top begins to brown too much, drape with foil. When cool, run a sharp knife along edge of pan to loosen bread and remove to slice. Enjoy plain or with your favorite deli sandwich ingredients.

Prep time: 15 minutes
Hands-off cooking time: 55 minutes
Serves: 12

* slightly more coarse version of almond flour. I grind my own from whole almonds 4 cups of almonds comes to 4 ½ cups of flour.

Approximate Nutrition per serving: 317 calories, 25 g fat, 2 g saturated fat, 13 g protein, 3g carbs, 5 g fiber, 450 mg sodium.
